Rectify any negative comments personally and at once and discuss any negative comments in detail with the Assistant Chinese Section manag

9、the ingredients used in each dish. You will make it a point to check with the Chef daily as to items available in the kitchen which need pushing, items which are not on the menu and know all dishes not listed on the menu which the kitchen can prepare with ease. Equally, you must know all dishes/item
10、s on the menu which are not available or sold out and possibly necessitate a preparation change. You will be informed by the Beverage Manager regarding wines/beverages which need pushing, vintages which have change

However, you must assist the Captains without delay if a guest is irate, abusive
